Yacca Honey is produced after bushfire triggers the plant’s tall flower spikes, meaning harvests can be separated by years. Eucalyptus cosmophylla Honey comes from a South Australian endemic species, and Karkalla Honey offers a fresh grapefruit-like bitterness suited to cheese and charcuterie pairings.
